Cauliflower “rice”

One of my favorite vegetables is cauliflower.  The rest of the family wouldn’t even try it.  That was until we had cauliflower rice!


One head of cauliflower

2 TB butter

1-2 cloves of garlic, minced

Salt and pepper to taste

Additional seasonings (optional-sometimes I throw in some Italian seasonings or pizza seasonings)

What to do…

  1. Wash the cauliflower.  Remove the leaves and stem from the cauliflower and cut off florets.
  2. Place in food processor.  Pulse until it looks rice like.  (You can also do this step with a cheese grater if you don’t have a food processor.  Watch your fingers!)
  3. In a skillet, melt butter over medium heat.
  4. Add minced garlic and sauté for 1-2 minutes.
  5. Add the cauliflower and stir.  Add additional seasonings if desired.  Cook “rice” stirring occasionally, until cauliflower begins to soften, approximately 5 to 7 minutes.  Sometimes I add a splash of chicken broth to help steam the cauliflower.

    I have tried this cauliflower rice and love it. Now I am thinking that there must be a way to turn it into a pizza base or something right? Do you have any tips to do this?

    • You would definitely need to toss an egg or two in with the cauliflower to hold it together. I would add a little crushed garlic and some italian seasonings. Depending if you are strict paleo or not, you could put in a 1/2 c.-1c. of mozzerella cheese into the crust mixture as well. Friday is usually “Meatza” night in our house, but maybe this Friday I will try a cauliflower pizza crust and see if I can get it to pass the hubby/kid test.

        Yeah, I lean more towards the Dairy Paleo so don’t stay to clear from the cheeses. Let us know how you go. I am planning a pizza night shortly for my wife and I and really hoping to get something that is nice and thin and crispy 🙂

    Just tried this tonight with my roasted chicken and salad dinner. It was fantastic! Thanks for the idea. What a great “stir fried rice” you could make with this…throw some veggies and some egg and onion in with it and it would be great with some Asian spices and gluten free Tamari! Thanks for the idea!
