Zucchini Brownies

Part of getting the rest of the family on board with going paleo is making sure they have treats.  This recipe is nice because I can sneak in some veggies while letting everyone enjoy something sweet!


1 c. almond butter

1 1/2 c. grated zucchini

1/3 c. raw honey (I am hoping to gradually cut back on the amount of honey.)

1 egg

1 tsp. vanilla

2 Tb. cocoa powder

1 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. nutmeg

1 c. Enjoy Life Chocolate Chips (use 1/2 c. in the batter and reserve 1/2 c. to sprinkle on top after baking)

What to do…

  1. Preheat oven to 350 and grease an 8 x 8 in. baking pan with coconut oil.
  2. Mix all of the ingredients together in a large bowl.
  3. Pour into greased pan and bake-35-40 minutes or until a toothpick comes out clean.
  4. Immediately pour remaining 1/2 c. of chocolate chips on top of the hot brownies.  Once the chocolate chips begin to melt, spread over the top of the brownies.
  5. Let them cool (if you can).
  6. Cut into 12 brownies
