Chocolate Chip Cookies

Here is our new favorite cookie recipe.  They disappear quickly in our house, so I keep ingredients for these cookies on hand at all times!

Ingredients:

2 c. blanched almond flour

1/2 tsp. salt

1/2 tsp. baking soda

2 Tb. grass fed butter or coconut oil, softened

1 egg

1/2 c. sunflower or almond butter* (I have made it with both and the family likes it with either one.)

1 tsp. vanilla

1/3 c. palm sugar (You can use up to 1/2 c. depending on your family’s taste.)

1/3 c. Enjoy Life Mini Chocolate Chips

What to do…

  1. Combine flour, salt, and baking soda in a medium sized bowl.  Set aside.
  2. In a large bowl, cream the egg, sunflower butter, butter or oil, and sugar.  Add the vanilla and mix well.
  3. Add the flour mixture all at once to the egg mixture and mix well.
  4. Stir in the chocolate chips.
  5. Using a tablespoon, scoop dough and place onto a parchment lined cookie sheet.
  6. Press each dough ball down with the palm of your hand.
  7. Bake at 350 for 10-12 minutes, until lightly browned.
  8. Let cool on wire cooling racks.  Store in an air tight container.

Makes about 2 dozen cookies.

*I made my own sunflower butter.  If using store bought, make sure to mix well and pour of any excess oil (especially if using almond butter).
