Pizza Chicken Rolls

This wasn’t what was supposed to be for dinner, but it is what ended up on our plates.  Thank goodness it was yummy!  Thumbs up from all family members which makes me one happy mom!

Pizza Chicken Rolls (ours served 3 adults and 2 kids with enough for my lunch tomorrow)


Don’t mind the dirty dish – I forgot to take the picture BEFORE we ate…oops!

What you need:

  • 4 boneless, skinless chicken breasts
  • 1/2 c. pizza sauce, may want extra to serve on the side
  • 2 slices of ham, cut in half
  • 12 slices of salami (could also use pepperoni)
  • small can of black olives
  • 1/4 c. shredded mozzarella cheese (if doing dairy)
  • 1/4 c. shredded Parmesan cheese (again…if doing dairy)
  • 8-10 slices of bacon, cut in half

What to do:

  1. Preheat oven to 425 F.
  2. Butterfly the chicken breast making sure to not cut through the entire breast.  You want the top and bottom half to be equal in thickness.  (Unsure how to butterfly chicken breasts….check out this video.)
  3. Once butterflied, open up the chicken breast like a book so that you have a thin sheet of chicken.  Place between two pieces of wax paper and pound thinner.  My chicken breasts weren’t that thick, so I just pounded until they were even in thickness.
  4. Once thin and even, spread approximately a tablespoon of pizza sauce onto the chicken breast.
  5. Top with a half slice of ham and two to three slices of salami (or pepperoni).
  6. Sprinkle with some olives and a combination of cheeses, if using.
  7. Roll your chicken like a log.  Roll it as tightly as you can.
  8. Using about four slices of bacon per log, wrap the half slices of bacon around the chicken.  It will not reach all the way around.  I just tucked mine underneath.  Place into a large oven-proof skillet.
  9. Continue with other chicken breasts until all have been placed into the skillet.
  10. Place skillet on stove top on medium high heat.  Sear for about 2-3 minutes once pan gets hot.
  11. Transfer chicken in skillet to the preheated oven.  Bake for 20-30 minutes or until the chicken is no longer pink.  It should have an internal temperature of 160 F if you like doing the thermometer thing.  (I stuck mine in the oven for 30 minutes and it came out perfect.)
  12. Once done baking, remove pan from oven and immediately remove chicken to a clean cutting board.  You can let it sit for a couple minutes before slicing.
  13. Slice and serve.  It is easiest to cut between the bacon slices and then you don’t lose any bacony goodness!

*My husband is a sauce guy, so I served this with some pizza sauce on the side.  He was happy.

It looks like a lot of steps, but it wasn’t really too bad.  It made the keep list, so will be on the rotation of dinners.
