Crepes

This crepe recipe is easy to whip up in just a couple of minutes.  We have been enjoying them for breakfast on the weekend.  I like to fill mine with fried apples, and the rest of the gang slathers them with butter and drizzles with maple syrup.  They are definitely something everyone looks forward to!

Ingredients:

1/2 c. full fat coconut milk

2 Tb. melted butter or coconut oil

1 1/2 tsp. vanilla

4 Tb. coconut flour

8 egg whites

What to do…

  1. In a large bowl, combine the coconut milk, vanilla,  and butter.  Sift the coconut flour over the coconut milk and butter mixture.  Whisk until a smooth paste forms.
  2. In a separate bowl, whisk the egg whites until they are frothy. (I put mine in my Magic Bullet.) Pour approximately 1/4 of the egg whites into the coconut mixture.  Whisk well.  Continue adding the egg whites, about 1/4 at a time, whisking completely after each addition.  By adding the egg whites slowly, the batter should be smooth.  If added all at once, the batter may clump together and become lumpy.
  3. Add a tablespoon of coconut oil to a 10 inch skillet and heat over medium heat.  Pour about 1/4 c. of the batter into the pan (if they get to large, the crepes can tear and become difficult to flip).  Quickly, swirl the pan around so the batter spreads evenly BUT do not make the crepe too thin.
  4. After one minute, loosen the edges of the crepe by sliding a rubber spatula underneath to prevent it from sticking.
  5. Once the crepe begins to brown, about 3 minutes, flip the crepe.  Cook for approximately two more minutes.  Once done, remove to a place and add your favorite topping or filling!

Fried Apple Filling

1 medium green apple

1 tsp. coconut oil

cinnamon

What to do…

  1. Peel the apple and slice thinly.
  2. Heat coconut oil in a medium-sized skillet.  Add the apple and saute until it begins to soften, 3-5 minutes.  Sprinkle with cinnamon and mix well.
